Ingredients:

  • 1 lb pork tenderloin or veal, cut into 1-inch cubes
  • 8-10 wooden skewers, soaked in water for 30 minutes
  • 1 cup almond flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese (optional for extra flavor)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil spray or cooking spray

Instructions:

  1. Prepare the Skewers:
    • Thread the pork cubes onto the soaked wooden skewers, placing about 4-5 pieces per skewer.
  2. Prepare the Breading:
    • In one bowl, beat the eggs.
    • In another bowl, mix the almond flour, Parmesan cheese (if using), garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat the Pork:
    • Dip each pork skewer into the beaten eggs, allowing excess to drip off.
    • Roll the skewer in the almond flour mixture, ensuring each piece is well coated.
  4. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  5. Cook the Skewers:
    • Lightly spray the air fryer basket with olive oil spray.
    • Place the coated skewers in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
    • Spray the tops of the skewers lightly with olive oil spray.
    • Air fry for 10-12 minutes, flipping halfway through, until the pork is cooked through and the coating is golden brown.
