Ingredients:
- 1 lb pork tenderloin or veal, cut into 1-inch cubes
- 8-10 wooden skewers, soaked in water for 30 minutes
- 1 cup almond flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese (optional for extra flavor)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil spray or cooking spray
Instructions:
- Prepare the Skewers:
- Thread the pork cubes onto the soaked wooden skewers, placing about 4-5 pieces per skewer.
- Prepare the Breading:
- In one bowl, beat the eggs.
- In another bowl, mix the almond flour, Parmesan cheese (if using), garlic powder, onion powder, paprika, salt, and pepper.
- Coat the Pork:
- Dip each pork skewer into the beaten eggs, allowing excess to drip off.
- Roll the skewer in the almond flour mixture, ensuring each piece is well coated.
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Cook the Skewers:
- Lightly spray the air fryer basket with olive oil spray.
- Place the coated skewers in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
- Spray the tops of the skewers lightly with olive oil spray.
- Air fry for 10-12 minutes, flipping halfway through, until the pork is cooked through and the coating is golden brown.
- Serve:
- Remove from the air fryer and let rest for a minute before serving. Enjoy hot with your favorite low-carb dipping sauce or a side salad!
